I was looking for an easy breakfast alternative for my husband to eat. We have been doing green smoothies in the morning but he needed something more. These cookies are great they have all the breakfast flavors of oatmeal in a cookie. Great on the go! Lot’s of fiber and added protein as well.

Ingredients:

1/2 cup applesauce or 2 bananas mashed

2 Tbs. ground flaxseeds mixed with 5 Tbs. water

1/2 cup organic nut butter (like peanut butter or almond, I bet cashew would be great)

2 Tbs. Unrefined Coconut oil

1 tsp. vanilla extract

3 Tbs. Honey or maple syrup

1 1/2 cup rolled oats

1/2 cup spelt flour

1/2 cup almond meal

2 scoops vanilla protein powder (I use Sun Warrior)

1/2 tsp baking powder

1/2 tsp baking soda

pinch of sea salt

1/4 cup chopped walnuts

1/2 cup dried fruit (I like diced dried apricots, raisins also work)

Preparation:

  • Preheat oven to 350 degrees
  • mix flax and water in a small bowl, set aside
  • put all dry ingredients into a mixing bowl
  • melt coconut oil and nut butter over low heat, add honey, till liquid
  • mix all wet ingredients into dry till just incorporated
  • stir in dried fruit and nuts
  • Bake for 15 minutes until just brown at edges

Enjoy with your favorite cup of tea!
