Apple Protein Pancakes

I’m going to try these pancakes tomorrow morning for Easter!

I hope you are all enjoying your Easter weekend. It has been amazingly nice here, I really hope it’s not a tease and it stays – yay, summer is on its way!

This morning I decided to whip up some pancakes. I’ve never been a big fan of pancakes – until recently when I discovered the many ways you can make protein pancakes. Now I am diggin’ them – big time. I had a giant jar of unsweetened apple sauce in the fridge that was nearing the end of its life, so I thought I’d cook up these tasty fellas. They’re super fast, extra delicious and contain half your protein for the day. So let’s do this…
Apple Protein Pancakes

Makes 1 serving (3 pancakes)

1/4 cup dry gluten-free oats or oat flour
1/4 cup egg whites
1/2 scoop vanilla protein powder
1/3 cup unsweetened apple sauce
1 Tbsp organic maple syrup
