Hot Cereal Ready to Go From the Crockpot
There are still plenty of chilly mornings left this spring to enjoy this for breakfast. This is a combo of grains and dried fruit and turns out delicious. I love having something hot in the morning and this is perfect because it is already cooked when you wake up.
1 cup steel cut oats
1/2 cup quinoa
1/4 cup brown rice
1/4 cup millet
1/4 cup amaranth
1 cup mixed dried fruit (unsweetened) prunes, raisins, apricots, cherries, I wouldn’t use tropical fruits they will totally disintegrate
1/2 cup sweetener, maple syrup, honey, coconut sugar (you can always add more when serving to taste
1/2 cup nuts, walnuts, almonds, pecans chopped
1 1/2 tsp. cinnamon
8 cups water
1 1/2 cup non dairy milk
Put all ingredients in Crockpot and set to low cooks 7-8 hours, it will look like a lot of liquid when you put it in but it will absorb all of it. Serve with additional non dairy milk and additional sweetener if needed. This makes enough for a crowd or for the whole week. We eat some then put the left overs in oven safe bowls (ramekins) and re heat each morning in the oven.
The variety of grains gives you a huge variety of nutrients and minerals and fills you up at least till lunch!
