Salad To Go

My New Favorite Thing Ever!


I think I saw this idea on Pinterest ages ago. It is truly genius… I pack salads for my hubby and I almost every day. And sometimes getting them ready each day is a pain. Or if I make several in tupperware it takes up a lot of space and is in plastic.

The solution is a layered salad, including the dressing in a quart size mason jar. You can get a case of quart mason jars at the hardware store for under $15.00 which is just over $1.00 per container much more economical then plastic or glass storage containers.

The real beauty is everything goes in the jar and when ready to eat you just shake it up and are good to go!

This is how I layered mine.

Dressing, a bit less then 1/4 cup

1/2 cooked beet sliced

1/4 cup Cooked Quinoa

2 Tbs. cooked lentils mixed with salt, 1/2 shallot and some cilantro for flavor

Shredded purple cabbage

1/2 carrot sliced

Green onions sliced

Toasted sunflower seeds

Lettuce of choice torn into bite size pieces


You can mix up the ingredients to suit your tastes. The most important thing is to put in the grains or vegis that won’t get soggy at the bottom and do not let the lettuce touch the wet ingredients.

You could add some chicken or tuna too I would put it just on top of the grains. I love quinoa in salads for the added nutrition but it would work without just with cabbage and carrots as the bottom layer.
