Thai Butternut Squash Soup
So I needed to clean out my refrigerator… is how this soup got created.
Luckily it turned out super good so I’m sharing it with you!
I had a few vegetables from my farm box that I didn’t know what to do with. A celery root and a leek. Now I thought of making a soup out of just those two but that’s just not exciting enough for me. I also had 2 small butternut squashes that I could add, Yay! You could very well switch up the vegetables and it would still turn out good.
I once took a cooking class at Millenium Restaurant in San Francisco and we went into the walk in and made a thai spiced soup out of whatever fresh vegetables were on hand. I was inspired by that memory to make this soup. Really I think this one turned out better then that one if I remember correctly. Not to say anything bad about Millenium which is one of favorite dining experiences ever, if you have never been, Go Soon!
24 oz. homemade vegetable broth or 2 boxes organic broth
1 Tbs. olive oil
1 leek, white and light green part only, sliced in half and chopped, rinsed very well
1 small yellow onion, medium diced
1 large carrot, peeled and chopped
2 celery stalks, chopped
2 small butternut squash or 1 large (roasted in the oven at 375 degrees for about 30 minutes until just tender enough to cut easily, I do massage won’t risk cutting these things without cooking a bit)
1 celery root, peeled and chopped
2 Tbs. Thai curry paste
1/2 tsp. salt (optional, curry paste can be salty),
1/2 cup unsweetened Coconut Milk (the kind you put on cereal not the kind out of a can though that would be good too)
In a stock pot, saute leek, onion, celery and carrot in olive oil. Add broth, butternut squash and celery root, simmer for 30 minutes.
Add curry paste and blend with an immersion blender or let cool and transfer to blender. Taste add salt or additional curry paste if needed.
