This is one of my favorite simple dishes to have on hand. It has a good dose of protein from the eggs and you can add loads of vegetables to it. It’s perfect for breakfast, lunch or dinner. And if you have in the morning it’s great because really how often do you eat vegis for breakfast?
This is very similar to my other post Spanish tortilla but a bit healthier without all the fried potatoes.
2 tsp. olive oil
1 small yellow onion
1 1/2 cup chopped broccoli florets
1 red bell pepper chopped
8-10 eggs (depends on how large a pan you are using)
1/2 tsp. salt
2 tsp. dried parsley
1 tsp. granulated garlic
generous pinch crushed red pepper
Heat olive oil in nonstick pan or iron skillet. Add onion and saute for 5 min. add broccoli and bell pepper saute until broccoli turns bright green about 5 more minutes.
In a separate bowl add eggs, salt, parsley, garlic and crushed red pepper. Beat until thoroughly mixed.
Spray a glass baking dish with cooking spray. Spread cooked vegetables in pan then pour eggs over the top.
Bake at 350 degrees for approx. 30 minutes or until set all the way through.
