Winter Kale Salad

Winter Kale Salad is a great way to eat everyone’s favorite… kale. It is such a nutritional super star any way to eat more is welcome! The addition of pomegranate seeds add a bright touch filled with antioxidants.

Kale is great during the winter it is a very hearty plant that grows well in California all during the winter a bunch shouldn’t cost you more then $2.00.

I love marinated kale salads the acid in the dressing really softens the kale and makes it easier to digest.

Ingredients

1/4 cup apple cider vinegar

1/4 cup extra virgin olive oil

2 tsp. honey

2 Tbs. Braggs liquid aminos

1 shallot diced

1 bunch Kale (any variety will work I particularly like Dino) chopped fine

Seeds from 1 pomegranate

1/4 cup raisins

sprinkle of pumpkin seeds or pine nuts

Preparation

Put first 4 ingredients into a jar. Shake vigorously to combine. Taste adjust amount of Braggs or Vinegar to your taste.

Put all remaining ingredients except for nuts or seeds into a large bowl.

Toss with 1/2 the dressing really coat very well. Add more as needed. Top with pumpkin seeds or pine nuts.

    This sounds delicious! I love kale chips, but have never tried kale any other way. The little bit of honey in the dressing would probably help cut some of the bitterness. I’m not familiar with Braggs liquid aminos though …
