Crockpot Lentil Curry

With the busy holiday season I have fallen in love with my slow cooker again. It is so nice to get home after a busy day and have a healthy hot meal waiting.

1 Tbs. coconut oil

2 large carrots sliced in 1/2 inch pieces

1 large yellow onion chopped

3 garlic cloves, minced

2 Tbs curry powder

1 tsp. ground coriander

1/4 tsp. cayenne pepper

1 large or 2 small sweet potatoes, peeled and chopped in 1 inch cubes

1 cup red lentils

One 14.5 ounce can diced tomatoes

3 cups vegetable stock

1/2 cup frozen green peas, thawed

1/2 cup canned unsweetened coconut milk

Salt

Prepartation:

1. Heat the oil in a large skillet over medium heat. Add the carrots and onion, cover and cook until softened, about 5 minutes. Add the garlic, curry powder, coriander, and cayenne, stirring to coat.

2. Transfer the vegetable mixture to a 3 1/2 to 4 – quart slow cooker. Add the potatoes, lentils, tomatoes and stock; cover, and cook on low for 6 to 8 hours.

3. Just before serving, stir in the peas and coconut milk and season with salt. Taste to adjust the seasoning.

    Sounds yummy, and you’ve inspired me to drag out my slow cooker too! I get frustrated at the end of the day when I haven’t pre-planned anything for dinner. This recipe proves that a little forethought is all you need to eliminate that frustration. Thanks, Tina!

    • It is a super big stress reliever on the busy days to know dinner is taken care of!
