Roasted Delicata Squash
I love winter squashes and the Delicata is my absolute favorite! It seems very much overshadowed by other squashes like butternut. But it is so much easier to prepare, never stringy and always delicious!
I love it simply roasted. It is sweet and wonderful.
To prepare I like to give it a quick peel, I’ve heard you can eat the skin but it’s still a little tough for me… not like other winter squashes but still not easy to eat.
Cut the squash in half lengthwise, remove seeds cut into 1/4 inch half circles
Toss with enough olive oil to coat
Sprinkle with salt and pepper.
Roast at 350 degrees till soft and caramelized on one side.
My husband called them squash fries… might be a good way to get kids to eat them.
