Baked Potato Fries with Curry

I am getting a weekly farm box again and it immediately sparked some creativity. I’m getting organic fruits and vegis from Full Circle which brings me beautiful local produce from a variety of farms. Love buying from the local guys!

It came with the most beautiful Yukon Gold potatoes. I had recently seen a recipe for baked fries and thought I’d season them up and have fries. Which I actually served with a salad and hard boiled eggs, delicious!

The types of potatoes I would do this with are thin skinned Yukon Gold or red potatoes if you happen to have access to purple potatoes that would be gorgeous. I suppose you could use russet potatoes but they may not hold up as well, I’ve never tried them.

Preparation:

2 Yukon Gold potatoes (cut into steak fry sizes, I got 6 slices from each potato)

2 Tbs. melted coconut oil

1 tsp. curry powder

large pinch Garam Masala (I wish I could say I mix my own spices… but I buy them premade)

You could probably add a bit of salt I didn’t and with all the spice you don’t really need it, but if you roll that way go ahead.

Toss all ingredients together in a bowl. Spread on a baking sheet.

Bake at 375 degrees for 20 – 30 minutes. They will be browned on the edges.
