Vegan Wheat Free Zucchini Chocolate Chip Bread
This time of year is sure to bring you extra Zucchini. Gotta make some bread out of them. Add some super foods and some chocolate chips and you can’t go wrong!
1/4 cup grapeseed, safflower or sunflower oil
1/4 cup maple syrup
1 cup non dairy milk (I use coconut or almond)
1 tsp. apple cider vinegar
1 tsp. vanilla
1/2 cup chopped walnuts
1/4 cup organic sugar
1 3/4 cup barley flour (or gluten free flour or wheat flour)
1/4 cup chia seeds
1 tsp. baking soda
1 tsp. baking powder
2 tsp. ground cinnamon
1/4 tsp. freshly grated nutmeg
1/2 tsp. salt
1 1/4 cups grated zucchini (1 large squash) or summer squash
1/2 cup dark chocolate chips
Preheat oven to 350 degrees. Oil muffin pan.
Mix oil, syrup, milk, vinegar, and vanilla in a small bowl.
In a separate, larger bowl add sugar, flour, baking soda, baking powder. spices and salt. Mix in the wet ingredients. If batter is too stiff add 1 tbs more milk. With a spatula add zucchini, walnuts and chocolate chips.
Pour batter into muffin tin. Bake 20 min. turn and bake 10-15 min more.
