Black Bean Salad

Black bean salad is wonderful to have on hand makes a great meal or snack. Is filling, nutritious and comes together in no time if using canned beans.

1 can black beans, drained and rinsed, or make your own from scratch.

1/4 red onion diced

1 clove garlic minced

2 tomatoes diced or 1 cup cherry tomatoes halved

1 red bell pepper

1 jalepeno

corn from 1 ear of corn (raw or cooked) optional

1 tsp cumin

1 handful cilantro chopped

Juice of 1 lime or lemon

splash of red wine vinegar

drizzle of olive oil

salt and pepper to taste

Mix all ingredients in a bowl and serve. Is even better the next day. This recipe is very forgiving feel free to change ingredients, try adding different vegis or spices, you can’t go wrong!
