I’ve focused on the basics of healthy cooking so now here is a cookie recipe! Didn’t want you to think I eat perfect all the time.
Although these are quite healthy cookies I couldn’t keep them around my house for more then a couple days they are delicious!
1 cup quick oats
2/3 cup spelt flour for gluten free (or whole wheat)
1/4 tsp sea salt
1/2 tsp cinnamon
1/8 cup unsweetened shredded coconut
1/4-1/3 cup raisins or chopped dried fruit
3-4 Tbsp chocolate chips (I probably used closer to 1/2 cup)
1/4 cup chopped nuts
1 tsp baking powder
1/3 cup flax meal or chia seeds ground
1/2 cup maple syrup
3 Tbsp peanut butter (or almond, cashew or hazelnut butter)
1 1/2 tsp pure vanilla extract
2 Tbsp canola oil
Preheat oven to 350 degrees.
In a bowl combine oats, flour, salt, cinnamon, coconut, raisins, chocolate chips, baking poweder, and stir until well combined. In a separate bowl, combine flax meal, syrup, peanut butter and vanilla stir until well combined then add in oil. Add wed mixture to dry, stir until just well combined (do not overmix).
Line a baking sheet with parchment or silpat mat. Spoon batter onto baking sheet evenly space apart, and lightly flatten. Bake for 10 – 12 min. till just light brown (do not over bake they will dry out). Remove from oven and let cool on baking sheet for 1 minute, then transfer to cooling rack.
