Lentil Soup

Lentil soup is a staple at my house. Lentils are super nutritious have lots of fiber and are much easier and quicker to cook then beans.

1/2 Cup of lentils has 9 g of protein and 8 g of fiber, whoo hoo!

I usually just throw what I have into my lentils but this is more or less the way it usually goes.

1-2 boxes organic vegi broth

1 onion

3 cloves garlic

2 celery stalks

1 carrot

1 can chopped tomatoes (the roasted ones work great for this)

1 1/2 cups red lentils

1-2 tsp. curry powder

1 tsp. chipotle chile powder

1 tsp. oregano

1 tsp. salt

fresh ground pepper to taste

Add all ingredients to a pot.  Cover simmer till lentils are cooked through approximately 30-45 minutes.
